Starting quarantine at 175 pounds ending at 275 !

There's a few Memes floating around out there.

 

One is When quarantine ends I'm either going to be a gourmet cook, or a drunk.

Another good one shows a before and after quarantine Thor from most of the movies lean and mean, then shows him plump and fluffy when he was pitying himself in that remote village.

Lets get some good recipes posted in here.

Either Disney, , just favorites, fun for kids ones or great camping ones in expectation  of the Forts reopening!

 

Mickey Beignets

 

Ingredients

  • 3/4 Cup Lukewarm Water
  • 1/4 Cup Granulated Sugar
  • 1/2 Envelope Active Dry Yeast
  • 1 Egg
  • 1/2 tsp Salt
  • 1/2 Cup Evaporated Milk
  • 3 1/2 Cups Flour
  • 2 Tbsp Shortening
  • Nonstick Spray
  • 4 Cups Oil for Frying
  • 1/2 Cup Confectioners’ Sugar
  • Berry Jam

Instructions

  1. Add Lukewarm Water, Granulated Sugar, and Dry Yeast to a bowl.
  2. Stir to combine and let sit for 10-15 minutes.
  3. Meanwhile, in a separate bowl combine Evaporated Milk, Salt, and 1 beaten egg.
  4. Your yeast should now be activated & foamy.
  5. Add in milk mixture.
  6. Add Flour and Shortening to mixture and combine.
  7. Once dough forms a ball, put on a floured surface and knead well.
  8. Grease a bowl and place well kneaded dough inside.
  9. Cover with a towel and let sit for 2 hours.
  10. After 2 hours, it should be double in size.
  11. Roll out dough to 1/4 inch thick.
  12. Use a Mickey cookie cutter to punch out dough.
  13. Heat Frying Oil to 350 degrees and get a wire rack ready.
  14. Fry Beignets about 1-2 minutes per side.
  15. Allow them to cool for 5 minutes.
  16. Dust with Confectioners’ Sugar or place Beignets with Confectioners’ Sugar in a paper bag and shake.
  17. Add a side of jam and dig in!

Other Flavors of Mickey Beignets

Double Chocolate: Add 2 Tbsp Cocoa powder into dough batter. Dust with Cocoa powder and of Confectioners’ Sugar.

Mardi Gras: Dust with yellow and purple sugar crystals.

Mint Chocolate: Add 1 Tbsp Peppermint extract and 2 Tbsp Cocoa powder into dough batter.

Pumpkin Spice: Add 2 Tbsp Pumpkin Pie spice (ground cinnamon, ginger, nutmeg, and allspice or cloves).

Hot Chocolate: Dust with Cocoa powder instead of Confectioners’ Sugar.  Heat up fudge syrup to drizzle over.  Top with marshmallows.

Candy Cane: Add 1 Tbsp peppermint extract into dough batter.

Three weeks ago yesterday I was eating Mickey beignets at the Port Orleans food court on the resorts visiting  day of our trip. We took the boat from Disney Springs.  Seems like a lot longer ago.  I don’t like to fry in oil but I may have to try this recipe. They were goooood.
