We are going to the fort on 8/5 (800 loop)and will arrive pretty early, around 9:00-10:00 and was wondering if they normally let you check in at that time if the site is available. If not I am going to book it for the night prior to ensure it’s ready when we get there.

They will let you check in early if the site is ready.  If for some reason its not, then you can park in the overflow, head to the parks or the pool and they will text you (most of the time) when your site is ready.

Unfortunately I really don’t want to park in the overflow area in the Florida sun and leave the RV. I am gonna have my dogs with me that would be staying in the motor home if we were to leave it in over flow. If for some reason the generator quit, the dogs could overheat prior to us going back to take it to the site. It’s not likely as we have never had an issue with it but that dang Florida sun is hot and it wouldn’t take long.

Booking the night before and not showing up doesn't guarantee you that it will be open that I know of and requesting a loop doesn't mean you will get that loop.  They make site adjustments daily based on arrivals, or at least they used to.  Hopefully someone else will chime in if I'm totally incorrect.

Would it work if they do online check-in?

Forgot about that since I never used it at the FORT.  I assume it would, but you know how things go, there are no guarantees on what they will do.

,We had an incident where we checked in, and were in the overflow, got our text and decided to finish lunch.  Got to the site and guess what, someone else was on it.  Since it was empty the office went ahead and reassigned it since the other person liked it better.  We ended up with an upgrade from 200 to 400 which the FORT ate for the 10 days.
