Since we have started doing this it has made the short trips a little more enjoyable. You bring up a good point about food. I have a food bin that is always ready to go with staples like pancake mix, canned beans, grits, canned ready made soups, marshmallows, etc. We prefer a hot breakfast but even this isn't much work as I always have sausage in the freezer and a carton of egg substitute in the fridge. We also do simple things like grilled cheese with soup or deli sandwiches for lunch, hot dogs or sausage with chips for the first night. To keep it simple I will buy brat rolls as opposed to hot dog buns as they work well for the sandwiches at lunch. Bolillos work well for dual use too. If we are doing burgers I use the sandwich style ciabatta for those and sandwiches later. For Saturday night I will do something more elaborate like ribs or chicken over the campfire with grilled potatoes and a bag salad mix. Again I always have these in the freezer or pantry so I don't have to go out of my way to buy them. I just place the frozen items in the fridge and they are thawed by the time we need them.
