  1. Gosh that recipe is complicated.

I think I'll cheat and buy frozen dumplings and just make the sauce, which is the best part of this dish anyway.

I never heard of Sambal Oelek, but I Googled it, and it looks like it's something not too hard to get ahold of.

Yeah, it seems like there's a lot to that recipe. My mom used to make pork shu-mai when I was a kid and I don't think there was much to it. In fact, I wonder if I have the recipe for it somewhere. I need to look and see if I can make hers one day!

  2. Happy birthday, twins! I'm glad you're showing so much of Disney Springs. We're heading down towards the end of this month and plan on spending a good bit of time exploring there. We don't have park tickets and we're going to try to convince Kenneth's mother to go with us - we thought we'd show her some of the stuff we like to do when we don't go to the parks. Hopefully we can make it over to the Fort to show her our favorite Disney resort!

  3. I am very sad to say I have never been. I have lived here 20 years but have not been to the Beacon. Yet.

Oh, no! My dad claims it's not as good as it used to be. I hope they didn't mess with any of the recipes - I used to love me a beacon burger!

  4. Did you get to eat at The Beacon in Spartanburg?

My dad used to go to the Beacon almost every day when he was in high school. After he moved away, served in the navy, and started a family, he started taking us up there (he still had a sister in SC that we would visit). The owner always remembered him and would send us home with a pie. I was always scared to order for myself. I didn't think I could "call it" the right way. I haven't been in a long time and don't even know how they take orders now. Do they still have someone call out the orders to the kitchen?

  5. That's the first time I've heard of furries. That article was funny - their numbers are growing because they're getting married and having families!

I wish I had a trip planned to the fort. We're taking time off from Disney this year, but I'm hoping to go back to the fort in February. We're trying to talk some friends into going with us. They think it's crazy how expensive the fort is. We tried a campground up this way and I'm definitely willing to pay more to stay at the fort now.

  6. We have looked at some and liked them. We have a small teardrop with a  side tent for out daughter so it works for us. We moved from a tent and i am happy for a comfortable bed, a/c (the south is hot and humid), and a tv is I really want to watch it. Actually the only place we have ever had any interest of using the tv was the Fort. Other than that we have used a couple of times during rain to watch a movie.

My only concern with the a-frames was when i was researching them a couple of years ago. I kept seeing water issues where the hinge meets the main trailer body at each end. It's probably just overblown but who knows.

I know in a couple of years we are going to upgrade from our teardrop to a travel trailer. I like the t@b's as we have a t@g. The thing is we really like the Lance 1685. More expensive but really gives up the ability for 3 to take longer trips out west and of course to the Fort.

We have been really looking at the Lance trailers also. We have a dealership nearby that has t@bs, airstreams, and Lance. We were really contemplating a small airstream, but they're just SO expensive! But I am so in love with them (mostly just love the way they look, but I'm sure it would last us forever). The Lance trailers are very well-built and they're super spacious. And for being a fairly small TT, they have huge water tanks (45 fresh, 45 black, 45 grey) - that's a big selling point for me. It seems like a lot of the state park campgrounds around here don't have sewage at the sites - you have to go to a dump station. I'd feel good about knowing it might take a while to fill the tanks. We thought the bunk in the 1685 was hilarious. Neither one of us could ever get up in that thing!

  7. We've been looking at pop-ups and A-liners a lot lately. I think we're leaning more towards a travel trailer at this point, even though that means we would have to pay for storage. The original reasons for looking at the A-frames were for 1) storing it in our garage, 2) it beats being in a tent during a storm 3) we could actually camp in the summer and probably be really comfortable. We looked at an A-liner the other day that had a hard-sided dormer on one end (where the bathroom was) and it was unbelievable how much bigger it made it feel. We're not close to doing anything yet and are always looking. It's possible we might lean back that way in the end.

  8. We are tent campers who take our dogs on vacation with us. We book full hook up sites, just so we could bring the pups over to the site to visit. They board at Best Friends and we'll occasionally check them out and bring them to the tent to hang out. Last week, we had them stay with us the last night because we didn't plan on leaving our site that evening (we usually start breaking down camp the night before). I wouldn't ever think of putting them in a kennel, in the tent, while we're away. Not only can it get hot in the tent pretty quickly, but I'm afraid someone might steal my pups. There's some real jerks out there and my dogs are super-cute! :)
