Is anyone out there as excited as me about our upcoming trip to the Fort? I have started loading the trailer and I never do that a week before we leave. I think we are leaving on Friday, going to make a stop on the way down for a quick visit, then on to the Fort. Can't wait.

we had a saturn vue awd we flat towed. we would flat tow our pick up but, it is a dually and a diesel--so there is a lot of weight to it.

today's lunch is......

cooked ground turkey, coconut oil, evoo, parsley, little bit of garlic, carrots, sweet potatoes and some cottage cheese. all mixed up in the food processor (like always). :)

i deserved a nap after that full day! you guys did great on the 5k! even though you got plastic medals---you have something many of us don't have. :jumpforjoy

this isn't a crockpot meal but, it is a pork roast recipe and i don't know why you couldn't make it in the crock pot. i just made mine in the oven and it was awesome! go ahead - try it and tell us what you think..

Awesome tr! we have been thru roswell many times and never stopped to see the sites - thanks for sharing. the pics are great! I have a chunk of petrified wood sitting by my fireplace. Love how it looks and it is soooo heavy.

PS: When you are in west Texas and on into New Mexico, stop every time you see a gas station. You never know where the next will be. Same goes for the Dakotas. Packing stuff for lunch is also a good idea. You might find a Dairy Queen but that's about it.

I agree-always keep a full tank. where you think a gas station should be-it won't be.

I interrupt this trip report for some totally awesome news. I just got a phone call that I had one a contest. Unfortunately it was a not a trip to Disney but it was pretty cool. I had one a free night at Mohegan Sun Casino. My wife and I love to go there for dinner and she has always wanted to stay there but I have trouble paying around $200 for a night in a hotel 30 minutes from my house. She is so excited right now. I am glad I entered and won so she can scratch this off her bucket list.

SWAI with couscous

1 pound of swai or any white fish

1 cup whole wheat couscous cooked with 1 T EVOO

2 yellow squash

2 cloves chopped garlic

1/2 teaspoon dried thyme

2 cups frozen peas/carrots

rub the fish with some EVOO and bake until done. Cook the couscous with some EVOO and flake the fish into the couscous. Sautee the squash with the coconut oil and 2 cloves of garlic and thyme. In a food processor mix the peas and carrots that have been microwaved with the cooked squash. Mix the veggies with the fish mixture

trying this one today. i put it all in the food processor again. i just think it is mixed a lot better this way. funny, the dogs haven't figured out that when the food processor comes out-i'm making their food. lol i'm sure it will happen sooner or later.

i went back to the store bought food for about 2 weeks and they have started itching again. so, i guess i have to try to return the unused cans. home-made from here on out!!

i would think someone knows about this place in nashville but- here it is anyway. a place called the loveless cafe has piggy popcorn and piggy pecans. they say it is popcorn and pecans cooked in bacon renderings so they have a sweet-salty-smoky thing going on.

just saw this in a magazine and thought some of you bacon lovers might want to check it out while you are at the gg.. :) have fun everyone!

sorry to hear you had items taken. i'm thinking that happened mostly over the friday/saturday time frame. glad you had a good time, though. this is a much better board to ask questions on. everyone tries to give the positve and negative sides of things.
