We don't need to use propane when we are traveling due to our fridge having 12V operation in addition to 110V and gas. Due to this I travel with the propane turned off. I also try to remember turn it off whenever we are going to be away from the campsite for any length of time. In both cases it just seems prudent to have the thing shut off since I have alternatives. If we had a two way fridge I would probably travel with it on so I could keep it cold. I also would likely leave it on if the shutoff wasn't as easy to get to as ours is.

I am honestly surprised that campers don't have an inertia shut off like how cars do for gasoline/ diesel.

The newer regulators do. They will shut off if you open the tank valve too fast as well.
