twiceblessed....nacole 433 Posted February 13, 2015 Report Share Posted February 13, 2015 I tried making pumpkin spice cupcakes the other day with nothing but the cake mix (Betty Crocker I think) and a 16oz can of pumpkin puree... turned out really good! The cupcakes were dense (more like a muffin), but still a really great way to cut out mayo/oil and eggs. From what I've read, you can use the puree with other cake flavors. She made a spice cake with peach soda. It was pretty good. Since there are no eggs, it tends to fall apart easily, no picking it up and eating by hand. Quote Link to post Share on other sites
