no more shrinking burgers??

not a recipe but, i just heard that if you stick a thumb print in the middle of your burger-you will reduce shrinkage when you cook it.  come on all of you grillers--tell us what you think.  will this help?

I have tried this and it does seem to work. I also use 93% and their is minimal shrinkage due to less fat to lose.

Why would putting a dent in the meat make any difference?

 

This sounds like one of those old wives' tales.

 

Like putting hot water in your ice cube trays because it will freeze faster.

When a burger cooks it tends to swell in the center thus shrinking the outside circumference. By putting the dent when making the burger it does not swell as much and does not pull the outsides in as much.

Put hot water in plastic bottles and cap them, put in freezer and the bottle will not split.

thermodynamics. I believe this would explain why hot water shouldn't freeze faster than cold, cool water.

However you need to google the "mpemba effect". I remembered this from college but I did have to look it back up for the correct spelling.

It states under certain circumstances "hot" water will freeze faster than "cold", "cool" water.

Sometimes common sense doesn't always make sense.
