Recommended Posts

From the Disney Food Blog...

Ingredients:
3/4 cup cornmeal
1 1/4 cup sugar
1 1/2 teaspoon salt
1 Tablespoon baking powder
1 3/4 cup flour
1/2 cup vegetable oil
1 cup milk
2 eggs

Method:
1. Mix flour, cornmeal, salt, baking powder, and sugar in a large mixing bowl.
2. In a separate bowl, blend milk, eggs, and oil until well mixed.
3. Using a mixer, slowly add the liquid ingredients to the dry ingredients, mixing just enough to incorporate.
4. Spray a 9×13 baking pan with non-stick cooking spray and pour the batter into the pan, spreading evenly.
5. Bake in a preheated oven at 375 degrees for 20-25 minutes or until golden brown.

I love cornbread but have never found a recipe I love so i usually just make Jiffy. I will try this recipe.

This is soooooooooo much better than Jiffy. That used to be my go to until I found this. I always thought Jiffy was kind of flat and dry but this is so moist and fluffy. Once I started making this all the boxes of Jiffy I had were packed up and sent to the food bank.

Copied and saved. I am thinking of mixing the dry ingredients, then taking it camping and just adding the wet ingredients and baking in the RV oven.

I can't believe how much sugar is in this recipe. Wonder if it would taste the same if splenda were substituted for the sugar.

I don't care what the Splenda folks say, I haven't found things to bake the same when Splenda is used instead of sugar. Maybe just cut back on the sugar?

Anybody tried baking with Stevia?

Yeah, but she screwed up the batter and I kicked her out of the kitchen.
