Let's make a bacon weave chicken!

Well, the chicken is on the Big Green Egg, so this is kind of an in-progress recipe/report.

This all started when I saw a picture of a bacon weave turkey. I wanted that turkey. But I don't cook our Thanksgiving turkey, and turkeys are pretty big for an every day meal. So I decided I would use the idea on a big roaster chicken. And we also decided to cook it on our BGE because if you've ever eaten anything off of an Egg, you know it just tastes better.

I went and got my chicken (almost 8 lbs.) and some bacon. Kroger was having a huge bacon sale, so these were the last 2 packs. That's why they're different brands. I know TJ will notice that.

I began by brining the chicken. The recipe I linked to used a dry brine, but I didn't have days (should have done that Friday), so I used a wet brine for 2-3 hours.

Then it was time to make the bacon herb butter to rub under and on the skin. I used rosemary and thyme with 4 pieces of bacon and a stick and a half of butter.

The chicken and I became very friendly as it got a coat under and on the skin.

Next it was time for the bacon weave. For some reason the recipe I was semi-following didn't wrap the legs, but why would I leave the legs naked? I was surprised that with the bacon herb butter, the weave, and wrapping the legs, I still only used 1 lb of bacon.

With the weave complete, it was time to put it on the BGE. We're cooking it using indirect heat at 350 degrees. We think it will take just under 3 hours.

Well, dinner is done, and it was AMAZING! Really, the best thing we've ever made on the BGE. And if you're my FB friend, I have a lot of BGE pood forn there, so for me to say it was the best.... is really something.

Here are your pictures, so you can imagine you're there....

Finished product. We let is rest about 15 minutes.

You can't really see how juicy it was here, but the legs and the wings just fell off when trying to carve.

Z gave it two thumbs up! Yeah, my kid is rubbing bacon on his face... don't judge!

We had my BIL and future SIL over for dinner, and everyone agreed. This was freckin awesome. I highly recommend it, even if you have to do it in the oven. But I think this one dish is worth the money for the BGE.
